Cici's Breakfast Casserole

Well, your Easter plans might not be what you had originally planned, but that doesn't mean it still can't be fun and special. I don't know about you, but I've already started ordering things for my husband's and daughter's Easter baskets, and even though I'm getting a little tired of cooking every single meal, I know exactly what I'll be serving for Easter brunch: Cici's Breakfast Casserole.

For holidays, my mom always makes the most delicious breakfast casserole. So although we may not get to be with my family Easter morning, this dish will make me feel right at home. I am constantly getting asked for the recipe, so I thought I would share it with all you Noble Babes.  

Ingredients: 
2 (7 oz) cans or 4 (4 oz)  cans chopped green chilies
6 corn tortillas, cut into strips
1 lb hot sausage, cooked and drained
2 cups shredded Monterey Jack and cheddar cheese
1/2 cup milk
8 eggs
1/2 tsp each of salt, garlic salt, onion salt, ground cumin, and black pepper
2 tomatos slices 

Instructions: 
Grease a 13x9 baking dish
Starting with the tortilla strips, layer with half of each of the chilies, tortilla strips, sausage, and cheese
Repeat until you've used all ingredients
Beat eggs, salt, garlic salt, onion salt, cumin, pepper, and milk until well combined
Pour egg mixture over casserole
Arrange tomato slices on top
Cover with plastic wrap and refrigerate over night
Remove plastic wrap, and bake at 350 degrees for 45-55 minutes or until edges are slightly browned

Serve with your favorite salsa, fresh berries, and maybe some cinnamon rolls for the perfect brunch with your quarantine crew. Happy Easter!
