This is something we have at least once a week. It's also a crowd pleaser for the non-salad eaters. We give you: the Bomb Kale Caesar Salad.
1/2 cup parmesan cheese
1/3 cup Italian bread crumbs
1 avocado, diced
1 shallot, finely chopped
1 garlic clove, grated
Fresh croutons or butter crackers
Salt and pepper
Dressing of your choice (we love the Whole30 Primal Kitchen Caesar dressing)
Roll the kale and chop very fine.
Put into bowl and sprinkle with olive oil and lemon juice
Massage (yes, massage) the oil and lemon juice into the kale. This is key!
Add parmesan, bread crumbs, avocado, shallot, garlic, lemon zest, salt and pepper to taste, and dressing.
Toss well and place back in fridge to cool and set.
Feel free to add some rotisserie chicken for some protein, and maybe even serve with rosé. Right, why not?! And make plenty, it saves great too!
