Homemade Almond Milk Latte

Somehow I (Staley) have been named the “granola one” out of the Noble group. One of the reasons is because I make my own almond milk. I blame it on my mom because she got me hooked. When I go home, my mom always wakes me up with the yummiest fresh and healthy goodies: juices, lattes, and a great breakfast. I crave her almond milk latte and am sure you will get hooked too. It’s super easy, and I personally think it tastes so much better than anything you can buy. Here’s how to make it!

Ingredients:
1 cup almonds (or cashews)
3-4 dates (pitted)
¼ tsp salt
1 tsp vanilla

Steps:
Soak 1 cup almonds (or cashews) in a bowl with water over night
In the morning, drain nuts and pour them into blender (I use a vitamix)
Add dates, salt, vanilla, and 4 cups water
Blend until smooth
(If using cashews, you can skip the next step and serve immediately)
Pour contents from blender into a nut bag and squeeze thoroughly over a large bowl to drain
I store my almond milk in a jar in the fridge and it’s good for about 4-6 days. I don’t usually save the leftovers from the nut bag, but I’m sure you could create something yummy with them!

For the morning (or afternoon) latte, I simply pour the milk in a milk frother (I use Nespresso), froth, and combine with coffee! Easy as that!
